Polarity: The Basis for Paper Chromatography

Ever wonder why oil and water do not mix? It is due to water being a polar molecule and oil being a nonpolar molecule.  This experiment is designed to teach students about molecular polarity and allow them to observe the separation of mixtures of molecules based on polarity using paper chromatography.
